On first glance, our Giadzy organic bucatini lunghi looks like a chunkier spaghetti. But look closer, and you’ll see that it’s hollow—the name is derived from the Italian word buco (“hole”). This straw-like shape has a clever double purpose: In addition to soaking up sauce for extra-flavorful bites, the hollow center also ensures that the thick pasta cooks evenly inside and out. True to pasta-making tradition, this bucatini is super-sized, measuring some 22 inches in length! Before machines could easily cut pasta to consistent sizes, pasta would be hung to dry at whatever length the dough created. It was sold extra-long, with the intention that home cooks would break the pasta up to suit their needs; in Naples, the cracking sound of pasta being broken for Sunday dinner would echo through the streets.

Giadzy Pasta is the result of years of careful taste-testing and research with master pasta makers from across Italy. To perfect our first in-house product line, Giada De Laurentiis and the Giadzy team zeroed in on what matters most in a pasta: taste, texture, and fun. By using the finest ingredients and working in partnership with skilled pasta artisans in Italy, we’ve created the pasta we’ve been looking for all our lives—and we can’t wait to share it with you.

Giadzy Pasta is crafted in Abruzzo, a verdant gem on central Italy’s east coast. Abruzzo has the highest concentration of national parkland in Europe, including the graceful peaks of the Majella mountains, home to golden eagles and stunning wildflowers. Pure spring water from the Majella range is combined with organically grown semolina wheat flour from the base of the mountains to make Giadzy Pasta dough, with a sweet aroma of pure wheat. Following ancient artisan techniques, Giadzy Pasta is cut on 100-year-old bronze dies, giving the pasta a rough, rustic texture that soaks up sauce, making every bite exceptionally flavorful. After it’s shaped, the pasta is slowly air-dried for up to 36 hours, protecting its delicate flavor and dense texture. The result: the perfect al dente bite every time.

Amelia ★★★★★

The hole down the middle grabs onto the sauce in a way I didn’t expect, and the thicker strands give each bite a nice chew. Cooked it for about 9 minutes and it held its shape perfectly, no mushiness at all.

Isabella M. ★★★★★

The hollow center makes the sauce flow right through each strand, so every bite tastes evenly coated rather than just on top. Cooked it for the full nine minutes and it kept a nice, chewy bite without turning mushy.

The holes in these noodles grab onto the sauce in a way regular spaghetti just doesn't, and the slightly thicker bite is perfect for a hearty ragù. Cooked them for about 12 minutes and they came out beautifully al dente. I've already gone through two boxes.
